Broccoli, leek, and cheddar soup
I am so pumped for soup season. a) it makes me feel like I'm eating tons of vegetables (just ignore the ton of cheese) b) it makes me warm c) it also makes me feel seasonal and festive. Yay!
This ended up tasting super fresh and delicious, not heavy or smelly the way that I sometimes imagine broccoli soup in my head. Does that ever happen to you? You avoid making something because you have some sort of terrible memory of a really bad version of it? I used to work at a restaurant were they didn't let us throw out the "soup of the day" at the end of the night. We were forced to reuse it the next day (our "soups of the day" were actually "soup of the week") and just add milk. Until, by the end of the week the broccoli soup was no longer green but a putrid browny color of yuck because it would get cooked down and gross, and we had to just add milk. Omg. I'm shuddering thinking about that. I'm sorry that you have that image in your head. Anyway, I never order broccoli soup at restaurants for that reason (I always stick to broth. You can't add milk to broth), and had steered clear of it at home, too. BUT. This soup. It tastes fresh. And light. And yum. It has changed my thinking about broccoli soup.
Leek & Broccoli Soup
2Tbs olive oil
3 smallish heads of broccoli (about 3-4 cups), chopped
2c chicken broth
about 1c cheddar cheese (more to taste of course!)
salt & pepper to taste
1. Chop and saute leeks in olive oil until fragrant, about 5 minutes
2. Add chicken broth, water, and broccoli. Bring to a boil and cook about 8 minutes (broccoli should be cooked)
3. Use a stick blender and blend until smooth (alternatively, blend in small batches in stand blender)
4. Add your salt and pepper to taste
5. Turn off heat and stir in cheddar cheese right before serving
6. Top with more cheddar and croutons!
